I am trying to eat healthy and am vegetarian, but I am not a good cook. I had a delicious but simple meal out recently. It was warm salad of spiced quinoa, edamane bean, squash, spring onion, tomato and sesame dressing with halloumi. I am trying to recreate it. Has anyone an idea please of what dressing I should use, or any other tips. I wonder if they used tahini? Thanks

Did it look creamy seacliff? If so it might be tahini.
I tend to use my normal dressings at room temperature over a hot salad as I have never been confident about heating dressings - probably because I have never seen it done.
Thinking about it I have had hot chicken livers and bacon served on a spinach salad but I didn’t really consider the hot bacon fat as a dressing and as a vegetarian that wouldn’t work for you.
A vinaigrette dressing is my usual. I vary the oil, vinegar/citrus juice and herbs and seasonings to suit whatever I am serving.
Tonight I am using olive oil, lemon juice, salt, pepper, sugar and fresh coriander.

Thanks Esspee. It wasn't creamy, not really visible at all. Maybe they put some chilli flakes in the quinoa and then just added a oil etc dressing. I may just email them and ask, they can always say no. It was just tasty not hot, and the warmth was great.
