Making rice pudding in the microwave

I have a real yearning for a bowl of rice pudding!! But it’s late in the evening!! Too late for the oven method.
I remember making rice pudding in the microwave years ago, but cannot for the life of me find the recipe and timings I must have used then. I’ve googled and googled but only find recipes using already cooked rice. The recipe I vaguely remember was a traditional pudding rice, milk, butter, nutmeg basic recipe ...... I suppose I could experiment but I thought I’d ask you lovely people first! Or I could just pop to Tesco Express for a tin ? (ps I haven’t got pudding rice in the larder, but do have arborio rice which I think might do!)

I do like the tinned version! But I’m cross with myself for not being able to just rustle it up myself ?

I made some in a saucepan the other day it took about 40 mins to thicken, dessert spoon of pudding rice, sugar and a pint of milk.
It was very nice but I took my eye off it and it boiled over near the end so I had to add a little extra milk at the end.

Thank you Tanith! I think I’d end up with a ruined saucepan!
I definitely remember making it in the microwave ...... I think maybe I’ll have to experiment ?

What about this one?

You could miss out the fruit and add sugar to the raw ingredients if you wanted a plain pudding.

Sorry AviaParva no help to you at the moment, but I've found the slow cooker is good for rice pudding. In fact I think I'll make some tomorrow as it is my week for cooking and we don't get much in the way of puddings in DH's week, though we do have good meals.

You could miss out the fruit and add sugar to the raw ingredients if you wanted a plain pudding.

Sorry AviaParva no help to you at the moment, but I've found the slow cooker is good for rice pudding. In fact I think I'll make some tomorrow as it is my week for cooking and we don't get much in the way of puddings in DH's week, though we do have good meals.

Aw thanks for that! My slow cooker has done a sterling job today with a rolled lamb shoulder! But I can freeze leftovers of that! But I don’t think I could cope with large quantities of rice pudding ?

I and you are going to have to wait! My enthusiasm has been thwarted by finding that both of my measuring jugs are in the dishwasher on a very long eco cycle ?

I make it in a pan initially with evaporated milk water sugar and vanilla. Then bake it in the oven with more milk a knob of butter and nutmeg. I leave it until there a thick skin has formed just like my mum made it.

I’ve used arborio rice, it’s fine.
And during lockdown one, with a tin of evaporated milk, diluted.

I tried it with arborio rice, but had to finish it on the hob, which gave me a sticky, ricey pan to clean ? and then I didn’t enjoy it anyway ? I tried but failed ?
I think I’ve probably learned to enjoy the tinned version more than home made! So I’ve put tins of rice pud on my online shop !

Yes, I did too! Delicious!,
My mum-in-law’s pressure cooker malfunctioned once and sprayed the kitchen ceiling with rice pudding! Oops!!

I thought I would give it a go, as I found the recipe. It didn't thicken in the microwave, so I have put it in the oven.

I'm not sure about the lack of sugar at the baking stage, either - I'm not convinced that a tbsp of honey will cut it, particularly with the citrus juice from the orange. We'll see.

That BBC recipe looks great. I thought that rice pudding took a long time because the rice took at least 30-40 mins to absorb the liquid. Next time I fancy some comfort food I shall have a bash at this one. I normally make semolina for such occasions, 5-10 mins in a saucepan.
