A scampi expert please!

I did make it and it was quite delicious. I certainly didnt try to remove the eyes!

How I used to love scampi. It seems somewhat of a rarity these days.

There are loads of videos of how to prepare langoustines - I just found that some people snap the head off from the tail and peel the tails, pulling out the "waste" in one piece where others cut them in half lengthwise.
Suppose I'd watch a few and see what suits. The are lots of them.

I googled too. Not a green blob anywhere. However, one site said to remove the EYES!

I have removed the alimentary canal from a prawn but the only scampi I know is the one served with chips ?sorry and good luck with your culinary adventure !

For the first time in all my 76 years have chosen to make scampi risotto.

Naturally, I must remove all the bits and make a bisque/fume (whatever). In doing this, have noticed inside many of the heads a dark green, pea-shaped "blob", which I am religiously removing with a teaspoon (Grrrr!).

Am I correct in doing this or am I removing the magic ingredient for my risotto?

Am not a TOTALLY ignorant fish cook I can remove the poo from a prawn one-handed (ha!ha!) but have never attacked scampi before and am not sure I want to again. ?

Help, please, for an ignoramus from an expert!
