The Coronation Quiche

Is anybody else underwhelmed?
I like my Quiche Lorraine made the classic way as opposed to what I used to make which was “Whatever mum has found in the salad /veggie drawer quiche”
One food writer recommends substituting watercress for the spinach (makes it soggy) and of course peeling the cooked broad beans, now that’s a boring job.
Oh (un)happy memories of church does where the paper plates gave way before you cut the bottom of the quiche!
No, it will be Coronation chicken for me, a glass or several of Prosecco or Cava (or Crémant now that Prosecco is cheap and common as chips) and maybe a cream tea in honour of the Duchy of Cornwall.

I looked at the recipe - it’s ok but there are quiche recipes I much prefer

Not sure I fancy that at all. I’d be unsure about putting ‘lightly cooked’ spinach in it, as would it not still give off a fair bit of liquid? And I like broad beans but not in a quiche! I will stick to my favourite hot smoked salmon and asparagus quiche with a light sprinkling of dill.

Can't stand broad beans so it's no good for me. Classic quiche for me too Foxygloves and I love Coronation chicken.

No broad beans for me thank you. Otherwise it's ok and I might try it, sort of adapting it a bit.

Perhaps they thought that people might start complaining about the cost of eggs today, only the royals can afford more than two eggs, it's all right for them, they probably have their own hens, chunter, chunter 🐓

It sounds okay to me - but only okay. I do love a homemade quiche and make my own quite often, but I can think of much tastier mixtures. I think I'd add some salmon if I was making it.

What is it ? We haven’t heard of it here. I’ll be getting in a nice bottle of red and some fancy cheese and bikkies for the night time marathon that it will be over here. I was going to get a few of us together but it is half way through the night for us I believe and I can’t face having very late visitors and being polite all night and ,unsociable as we are, we don’t want overnight visitors,either. Nope, we’ll just snuggle up in our dressing gowns and drink in all the pageantry. It better be good!

Using hot smoked salmon takes the blandness out of it that you often get with salmon quiches. It’s adds another layer of flavour. Callistemon I line a nine inch flan case with shortcrust pastry and bake blind in the usual manner. Whisk three large eggs and make up to three quarters of a pint with half milk and half cream and sprinkle in quarter of a teaspoon of celery salt optional. Lightly steam the asparagus and keep some whole lengths for the top. Chop up the rest. Flake the salmon and put in the flan case with asparagus cut into small pieces. Pour over the egg mixture and a little finely chopped dill. Lay the whole pieces of asparagus on top in a spoke effect. Bake for thirty five minutes at 180C (160 fan) or until the top is set.

We can get lovely ones in our local charcuteries and boulangeries (I do make them, but mostly I think why would I bother). Because this is Normandy there are a lot of variations on camembert and lardons which I love.
We went on holiday to Lorraine a couple of years ago and couldn't find quiches anywhere. Weird.

I'll stick with my own - no eggs, no dairy and delicious.

I’d eat it. As I’m not a fan of salmon, my choice would be leek and smoked haddock.

I would make the pastry don’t like packet stuff I would replace the beans with green beans or peas.
