I’ve had a disaster trying to make chocolate chip muffins from a Mary Berry recipe. Never tried before but usually a good cake maker so horrified when they were a disaster - basically the chocolate chips sank to the bottom of each case and the cakes overflowed. What went wrong - any ideas anyone?

Did you add your wet to the dry ingredients or did you over mix, muffins don't need a lot of mixing, I usually use an ice cream scoop to put the mixture into the cases . One scoop per case is usually fine.

I think you've overmixed the mixture. A quick stir is adequate. Add the chocolate chips at the end and barely incorporate them

Muffin mixture should be a batter, it should not be able to be scooped.

Oh dear, they wouldn’t have ended up in the bin in our house. I would have enjoyed the sponge and the scraped out chocolate, even if it was a faff doing it!

Well, Sago, it was a batter and as I’d made it in a bowl, not a jug (as in pancake batter) I used a ladle. I just don’t understand why the chips sunk. Mary Berry said fill the cases almost to the top, so I left about 1/4inch and they overflowed and joined up during cooking so they had to be cut about. They are a mystery and not my finest baking moment grin

I’ve always considered myself a pretty decent baker, but muffins are my bete noir! I’ve given up on them completely. DD makes lovely muffins and has given me various pointers as to “where I am going wrong” (how things change!). It’s definitely all in the mixing, it seems. I’ve stopped eating my heart out about my muffins and just eat hers instead!

Overmixing and maybe too wet a mixture ?

I wonder if chocolate chips could be dusted with cocoa or drinking chocolate powder .
I tend to use roughly smashed up bars of chocolate .

Cake disasters can make nice trifle bases .

We all have disasters !
I'm not proud of my Christmas dessert .
I felt an absolute fool in front of my friends as it looked so awful !

I’m baffled but not really upset - probably did me a favour as if they’d been fine we’d have 6 each to eat cupcake wink

I baked a lot when I had kids at home but OH and I really don’t need sugary stuff so maybe this is a sign to hang up my baking trays and concentrate on healthy cooking. I just wanted to use up stuff left over from granddaughters recent visit. I dare say she’d show me how and she’s only 12 grin
