Oh what to eat in this hot weather

Any ideas on what to have for lunch or dinner.
We’re fed up with salads
Too hot to cook much . Something light and tasty.

Were having an omlette with broccoli/cheese/onion and mushrooms,with a side salad and garlic bread.

I shall be looking in M & S later, so it will probably be a quiche with new potatoes and veggies for dinner tonight.

We have made good use of the BBQ since the sun has been out.

Same as GG13 later, quiche, new potatoes and veg. Cooked a roast chicken last night as it was MrJ’s birthday, but had pre cooked it in the slow cooker, so the oven was only on for a short while. Tomorrow will be leftover chicken in sauce with fresh pasta.

Quiche with salad today. Other days stir fried veg and rice, pasta with a sauce from the freezer, cold chicken & ham pie, tortillas, mackerel with chilli oil and a chunk of wholemeal bread. I don’t want to eat much when it’s really hot.

Last night, I had left it so late that I didn't feel like preparing anything, so I put together some raspberries and strawberries, a tablespoonful of Greek style yoghurt with a drizzle of honey. It was enough; I didn't wake up starving in the middle of the night.

I always have salad leaves in the fridge, and all the common place ingredients for salads, I also like crisp lettuces like Romaine, so have been buying those lately. Salads can comprise of anything you like, I often add green beans, asparagus, new potatoes to make it more interesting and dress it with some balsamic or French dressing and accompany it with some sort of protein, cheese, eggs, smoked salmon, or cold poached salmon the latter makes a nice summer meal imo, all fairly quick and easy. I'm also a fan of a big fresh fruit salad in place of an evening meal in this weather. Like many I usually have a plethora of summer fruits at this time of year, maybe add a meringue and a big dollop of Greek yogurt, creme fraiche or even cream.

Poached salmon and jersey royals. Later this week I plan Coronation chicken, cold chicken in a curried mayonnaise with a rice salad. Also Pasta Norma, pasta, roast diced aubergines, chopped tomato, fresh basil and lots of grated parmesan, serve hot or cold. All followed by fresh berries with either ice cream or whizzy cream.

Yesterday we ate out with some members of the family and 95% of us chose fish of different variety. Lighter than flesh this hot weather.

Today we have a variety of charcuterie with olives and a selection of salad.

Tomorrow is roast lamb? I’m going to regret that aren’t I? But I have a perfect cauliflower and French beans that need picking and using.

My fish box came yesterday, so today we are having sole poached in white wine with new potatoes from the garden and green beans.
It will only take about half an hour to prepare and cook.

Ploughman’s with a cold drink.

Tonight Tilda’s ready cook coconut rice with prawns, spring onions, chopped cucumber from our greenhouse, and maybe a little Chilli sauce with ciabatta rolls.

Our favourite lunchtime light meal is tarator which is basically cucumber and walnuts whizzed up in the food processor and served cold with chopped dill on top.

Forgot tarator has Yoghourt in it as well so it is good as well as cool. I use a recipe from Waitrose

I bought a cauliflower yesterday and just did a smallish cauliflower cheese for my dinner. I'll use the rest of it in a day or two.
Also bought some baking potatoes because one of those with grated cheese/or whatever, on is enough of a meal in this heat.
My fancy cheese on toast is also enough. I put a slice of ham on nice thick bread, then some sliced tomatoes, then the cheese on top.
And of course, endless salad variations. Pasta salad, rice salad, quinoa salad, etc.

Unusually for me I didn't eat breakfast so have just had brunch - frittata with rocket, feta & beetroot.

Have chilli con carne simmering in the slow cooker!

Stir fries might suit. Quick to cook, tasty if you add some sauces or spices.

I’m just having a light lunch as I’m trying to lose weight, so only one Milky Way and one packet of crisps. But I do drink two glasses of water with it.
This evening I’ll have soup and a buttered bap.
Maybe two baps.
