Has anyone got a good recipe for a quick and easy supper - preferably using as few pots and pans as possible! I recently found an excellent website - Yumly - and they had a recipe for chicken and chorizo tray bake. It was a total change and really delicious and even better just used one dish in the oven and however many you chose to use for veggies (potatoes and onions went in with the chicken and chorizo). 45 minutes later we had a tasty and interesting supper. That's my kind of cooking!

Hi Sue I like to make summer rice

Ingredients

Rice
Green and Red Pepper
Cucumber
Eggs
Prawns
Mayo

Method

Boil rice and let it cool
Slice peppers and cucumber
Boil eggs
Add sliced peppers eggs and cucumber into the rice
Add prawns
Add Mayonnaise and stir together smile

That sounds delicious. Why are the best recipes the simplest?! Will give it a go next week when I get stuck for a meal. Thanks Tab12.

Both recipes sound nice! I've just had a look at Yummly - it looks good. I'm all for one pot meals. If I do anything in a casserole I add some waxy potatoes or new ones, as well as veggies, so I get a one pot meal.

I'm also interested in recipes for one. I don't mind a recipe for two as I can bear eating something 2 days running, but enthusiasm is a bit pushed in recipes for four!!! I know you can reduce ingredients, but I get stuck with altering spices, not being sure quite how to reduce them without altering the flavour. Any thoughts of this?

I think herbs and spices and seasoning are very individual and personal. I hate coriander with a passion so just leave it out or add a little bit whereas they never seem to include enough chilli! About to make a sticky ginger cake with ginger in syrup but will add a bit more otherwise the taste will be lost.

I also think your tastes change as you get older. As a child I would never eat parsnips or swede but love them now so don't let childhood preferences stop you from trying things.
