Ingredients

225g (8oz) brown sugar
225g (8oz) butter
85g (3oz) ground almonds
225g (8oz) self-raising flour
1 tsp mixed spice
1/4 tsp nutmeg
5 large eggs
225g (8oz) raisins,
340g (12oz) sultanas
340g (12oz) currants
115g (4oz) mixed peel
55g (2oz) cherries
140g (5oz) brandy
1 lemon (grated, juice and rind)

Handy Hint

Add lour after fruit as this stops fruit sinking to bottom of cake. Well it has always worked for me.

Method

1. Use 8 1/2inch tin.
2. Line with double grease proof paper, let it come about 1/4 inch above tine.
3. Surround tin with double layer of brown paper.
4. Mix butter, sugar, add eggs slowly one at a time (I don't I put them all in together and never have a problem).
5. Add ground almonds.
6. Add fruit.
7. Add flour plus spices.
8. Add brandy and lemon juice.
9. Bake at 140C.

This recipe was given to me in 1966 by a friend who was given it by her grandmother who won a prize with it when the radio did competitions. It is very old. I have made it for all sorts of occasions so have probably made it over 70 times and it has never failed me. I don't use exactly the dried fruit as I do not like cherries, but I do use the exact quantities of dried fruit in some form or other.I have made it in October and kept it in a tin until Christmas, or have made it a week before with no problems whatsoever. Cooking times are vague as the original recipe was for a long slow bake in a warm oven. If anyone uses it I hope they have as much pleasure from it as I, my family, and many friends worldwide have.
