Ingredients

350 g wholewheat pasta
3 tbsp water or vegetable stock
1 onion (chopped)
2 carrots (finely chopped)
1 large courgette (finely chopped)
400g can chopped tomatoes
400g can brown or green lentils
1 teaspoon mixed herbs (dried)

Method

1. Cook the pasta in plenty of boiling water according to the directions on the packet.
2. Cook the vegetables in the water or stock for about 5 minutes until softened.
3. Add the tomatoes, lentils and herbs. Cook for a further 5-10 minutes until the sauce thickens slightly.
4. Drain the pasta and place on the serving dish. Top with the lentil bolognese.

I love this recipe because it's quick, healthy, tasty and I can use items stored in the larder as well as regular vegetables (i.e. I don't have to make a special trip to the supermarket to search out ingredients). Lentils are also filling so it's great if you are trying to watch your waist! It's a child-friendly recipe especially if you chop the vegetables up finely.
