Ingredients3 cloves garlic (sliced)2 tbsp olive oil 2 small fennel bulbs (thinly sliced) 6 plum tomatoes Small bunch basil leaves 2 tbsp balsamic vinegar 300g spaghetti 100g ricotta |

Method1. Heat the garlic and olive oil in a large frying pan, add the fennel, season well with salt and pepper, cook until soft and golden (approx 10 mins)2. Chop the tomatoes and put in a seperate bowl along with chopped basil and vinegar and season. 3. Cook the pasta according to the packet, drain, add to the tomatoes, pour over the fennel mixture and mix together. 4. Crumble over the ricotta cheese and serve! |
