Ingredients

450g self-raising flour
255g margarine
255g brown sugar (soft brown is best but I have used demerara)
135g white sugar
3 eggs
3/4 tsp baking soda
1 1/2 tsp salt
Vanilla essence (or flavouring)

Handy Hint

I use soya margarine but butter would be fine too

Method

1. Preheat the oven to 180C/160C fan/Gas mark 6/
2. Mix ingredients in a bowl and then place onto a baking tray covered with greaseproof paper - you can make your cookies any size you fancy but as a guide a heaped tablespoon makes a good sized cookie. Be sure to leave a reasonable gap between each cookie to allow for them to expand during cooking.
3. Cook for 12-15 minutes until light golden brown. When cooked place onto a cooling rack. Decorate if required.

The great thing about this basic recipe is you can add anything else you fancy - chocolate or chocolate chips, dried fruit (currants, raisins, sultanas), nuts (chopped or sliced), mixed spice cinnamon or nutmeg - you could use almond essence if preferred over vanilla

I have loved every batch I've made including all those listed and some I've added chopped fresh fruit, oats and/or cereals to - making them more like cookie-flapjacks. They are also great for dipping in tea, coffee or hot chocolate.
