Ingredients

1 pack chicken mini fillets (or regular boned skinless chicken breasts)
1 tin apricots in juice
1 packet dried onion soup mix (not the ones with croutons or cheese though)
Splash balsamic vinegar

Handy Hint

Easy to make for larger numbers - simply double up ingredients

Method

1. Put the chicken in an ovenproof dish
2. Add a little boiling water to the soup mix so that it begins to dissolve and pour over the chicken
3. Pour over the apricots and juice and add a splash of balsamic vinegar
4. Cook in preheated oven (200C) for 30 mins. Whole chicken breasts will take longer so you may need to cover after 30 mins to prevent apricots burning.

Serve with cous cous or rice and green vegetables.
