Ingredients

Shortcrust pastry (about 400g - home made is best but ready made is fine!)
250g best lean back bacon (free range if you can)
6 free range eggs
1 medium onion (chopped)

Method

1. Roll out half the pastry to fit a 23cm/9" deep oven proof plate or pie tin.
2. Fry onion in a little olive oil until soft ,add bacon that has been cut into small pieces, and fry until beginning to brown.
3. In a bowl scramble the eggs with a little cream if you wish (not essential)
4. Place the onion and bacon in the pie dish add the scrambled eggs and cover with the other half of the pastry
5. Bake in an oven (medium heat) for about 45 mins until golden brown,
Delicious hot in winter or cold with salad in summer!!

This was a recipe my Mum used to make for supper often when I was a child.It was a family favourite,wholesome and tasty!!
