Ingredients1 tub double cream3 chicken breasts 2 lemons Rice 2 bay leaves 1 can of coconut milk Salt and pepper |
Handy HintWhen your rice is halfway cooked, take off the heat and place a plate or lid on top - the rice will continue to cook on its own and won't be overdone. |

Method1. Dice the chicken breast into chunks and fry lightly in a little olive oil.2. Juice the 2 lemons and put half the juice in with the chicken, add the cream then season with salt and pepper and cook gently - add the 2 bay leaves at this point. 3. Now open your can of coconut milk, pour into pan, fill the empty can with rice and pour into pan. Now use the can to put 2 canfuls of water in and bring to boil then let simmer - when done strain rice and plate then drizzle your creamy lemon chicken over the top |
