Handy HintI make this for my DDIL at xmas, as she's vegetarian (we're not, but I enjoyed making something different in the end). We liked this so much that I just start to make it when the weather gets colder - but I add bacon as we're not vegetarian. |

Method1. Preheat the oven to 180°C/fan 160°C/gas 4. Fry the pepper, leek, carrot, onion and celery in the oil on a medium heat for about 10 minutes, then add the mushrooms and fry until they are all quite dry (don't take them off if they produce a lot of water, as the loaf won't hold together).2. Bung it all in a bowl and add the egg and add most of the cheese and breadcrumbs. Add some salt and pepper. 3. You'll need quite a deep loaf tin to put the mixture in (greased first) and then put the last of the cheese and breadcrumbs on top. 4. It will need to stay in the oven for about an hour watch for it going brown on top. |
