Ingredients

2 ozs butter
1lb. leeks, thinly sliced, and well washed
8ozs pasta, any shape, farfalle, spiral, etc
1/4 pint chicken stock, from a cube is fine
4ozs cooked ham, chopped
1/4 pint, single cream
Pinch of dried chilli flakes
Salt and Pepper

Handy Hint

A mix of oil and butter may be used to cook the leeks. Also more stock and 2tbsp of creme fraiche may be used instead of cream

Method

1. Melt the butter in a saucepan, add leeks and fry gently for 5 minutes
2. Add stock and simmer, uncovered, for 20 minutes, adding chilli flakes to taste.
3. Meanwhile, cook the pasta, according to the instructions. Add ham, cream and seasoning to the leeks.
4. Beware adding too much salt, as some stock cubes and ham, can be salty.
5. Drain the pasta, and add to the leek sauce.
Mix well and serve
