Ingredients

3 egg whites
320g unsweetened desiccated coconut
3 tbsp stevia

Method

Whip up the egg whites with an electric mixer, then add the desiccated coconut and stevia.
From the mixture, make small balls about 4cm across and place them on a baking parchment-covered baking tray.
Bake for 40 minutes at 180C.

Great recipe, BUT, stevia makes me so windy I cannot be near people for a day after eating it- too embarrassing.
