Ingredients170g (6oz) good plain chocolate200g (7oz) plain flour 1 tsp baking powder 1/2 tsp bicarb of soda 1/2 tsp salt 115g (4oz) sugar 2 large eggs 180ml (6 floz) vegetable oil 225g (8oz) (peeled weight) grated courgettes 55g (2oz) chopped walnuts/pecans (optional) |
Handy HintCan be made with bananas instead of courgettes. I also make it as a tray bake, like brownies. |

Method1. Sift the dry ingredients together.2. Beat the eggs with the oil. 3. Melt the chocolate over a low heat. 4. Mix the egg and oil with the dry ingredients, then add the melted chocolate and grated courgettes. Stir well and add nuts if using. 5. Bake in a moderate oven. 350°F, 180°C, gas 4 6. Icing: melted chocolate with a knob of butter and a gloop of golden syrup mixed in. Alternatively, make the cake in Victoria sandwich tines and sandwich together with butter cream. Or, serve hot with ice-cream, creme fraiche or yogurt. |
