Ingredients

170g margarine
170g ounces sugar
225g self-raising flour
small teaspoon baking powder
3 medium eggs
2 tablespoons milk

Handy Hint

Vary your recipe by adding halved glacé cherries, or chopped apricots, or one chopped desert apple - or anything else you might have on hand!

Method

Put all ingredients into bowl and roughly mix together with a spoon for one minute. Then use electric mixer to blend until smooth and glossy.
Tip into lined 8 inch tin, smooth the top and bake at 160 C (fan 140 C) for 75 minutes.

Be careful when adding "wet" extras, they make the cake a bit fragile.
