Ingredients450g diced shoulder of lamb [fat removed]1 large onion 2 cloves garlic 1 tall tin chopped tomatoes 1 tsp paprika (I use hot but mild would be fine) 0.5 tsp ground cinnamon 2 tsp ground cumin 1 tsp ground coriander Pinch of crushed chillies (optional) 150 ml water 6 ready to eat dried apricots (I halve them) Large sprig of parsley and mint Oil, salt and pepper |
Handy HintThis freezes well so I generally double up (actually today I did 4 lbs of meat!) |

MethodPreheat oven to Gas Mark 2, 150CFry the lamb pieces in very hot all until well browned. Best done is small batches. Transfer to a casserole. Finely chop onions and crush garlic then fry over a lower heat in a little more oil until nicely coloured. Stir in the spices and fry for a minute or so. Add to casserole. Add the water to the frying pan and bring to the boil stirring in all the gunk at the bottom of the pan. Add the tomatoes, half the herbs and all the apricots. Bring to the boil. Season really well. Transfer to the casserole, cover and cook for two hours. serve with couscous or rice with the remaining herbs sprinkled over the top. |
