Ingredients

9oz flour (250g)
6oz butter (175g)
4.5 oz caster sugar (125g)
1 small egg well beaten (or you can use 1 large egg yolk)

Handy Hint

You can adjust the quantities, e.g. to use a little less butter or more flour. I don't think it's critical. Just experiment until you've got the taste and texture you want

Method

Rub butter into flour (or use a food processor)
Add sugar and egg and mix to a smooth dough

Wrap the dough in baking parchment and chill for half an hour or so, as with pastry.

Then roll and cut out and bake at 170°C/325°F/Gas 3 on baking parchment-lined baking trays for 10-12 mins or until done how you like them.

When the biccies are cool, sandwich two together with your favourite jam (I think raspberry was the favourite) and ice them with simple water icing, to which you can add a bit of lemon zest or juice if you want. My gran used to sprinkle dessicated coconut on some of hers and on the others she put half a glazed cherry.
