What to do with left over coleslaw?

During the cold weather we have coleslaw on jacket potatoes and normally a small tub get eaten in on sitting, any that might be leftover goes on a cheese sandwich for lunch the following day.

Yes I’ve started to make my own after too many white cabbages piling up from oddbox.

I must say it is easy to do and fresher. You can also add what you fancy like, nuts, or dried fruits etc.

I always make my own. Not keen on bought coleslaw. We invariably eat it up

Just that really.

I love coleslaw with somethings and buy a small tub most weeks but, almost inevitably, it goes out of date before it's all gone.

Any inventive ideas for the left overs please.
