On Thursday, I decided to make an Apple Cake, and a Fruit Cake. So far , so good. While the cooked dried fruit mixture was cooling, I made the Apple Cake, which went according to plan. So while it was in the oven, I finished preparing the Fruit Cake. The recipe said, pour the batter into the tin, well mine needed scraping out of the mixing bowl. Now, I have made this cake before and it usually is fine. It came out of the oven, looked like a cake, smelt like a cake, so what have I done? Then I realised, the recipe calls for just 4ozs each of self raising flour and plain flour. I have added 8 ozs of each? . I haven't dared cut into it yet, and I may need a hoard of hungry boys, who will eat anything. At least it will be a rib-sticker. The Apple Cake was fine, and is nearly all gone.
