As children my mother always made her own cakes and did a fabulous Christmas one, but my own children only ever wanted sponge cakes so I have never bothered. I am a very keen cook, enjoy experimenting, make huge vats of marmalade and jellies and now with a very keen 4 yr old grandaughter have just made my first ever Christmas cake. Granddaughter was transfixed by a youtube video on how to decorate a Christmas cake so we are on our way and it is in the oven. Delia recipe. Looks a huge amount of fruit and not much flour - is that what it is meant to feel like - very very dense mixture. She says not to look at it for 4 hrs. Really? All advice from here on much appreciated and does anyone have any other failsafe recipes>

Well let me explain.... My DH is doesn't like Christmas cake and if I kept it here I would eat the lot. So DGD took it home and texted me to say that she would love to try some. Well, as I can't refuse her anything, I told her to go ahead, it's her cake. When I went around there a few days later, there was only a third left. I had to have a taste didn't I? Then I made one for my sister and got a message to say 'cake is delicious'. I can only imagine that my cakes are so delicious that people can't wait until Christmas. That's my excuse and I'm sticking to it.
