Recycle damsons from damson gin??

I am just about to decant some homemade damson gin. Is there anything I can do with the damsons rather than just throw them away? Seems such a waste!!

If they have formented, they should go into the compost.

If not, you could take the stones out and make compote of them, I imagine it would be really nice as the fruit layer in a trifle

Delicious stoned, squashed and served over ice cream or in a very boozy crumble.
I have never thrown it away.

Nigel Slater has some suggestions.

Damsons that have been strained from their liquor can be stoned and stirred into the cooking juices of a roast loin of pork or fillet of venison. They look a little wrinkled, but are full of the flavours of gin and fruit and not to use them would be a terrible crime. You could use them as the base of a boozy preserve, which is unlikely to set, by boiling the fruit with sugar and a little water until it partially thickens, then serve with warm, plain scones (no sultanas here) or a toasted, rough-edged crumpet.

Yes there is. Eat them!

They are alcohol-imbued fruit and they taste gorgeous. Being effectively pickled they keep very well too. Make a trifle with them, put them in a crumble, or just eat them as they are.

I use raspberries and tayberries from gin to form the basis of a boozy trifle but boozy damson crumble sounds amazing. Think I’ll have to try that when the damson vodka has matured.

I made blueberry vodka last year.
The boozy blueberries were wonderful in a crumble.

Gently melt some chocolate (preferably dark) and stir them in, either place teaspoon onto greaseproof paper for individual liquor chocolates or just spread it out and break into chunks after allowing to set in the fridge.

I'm 100% in agreement with annsixty. The gin-soaked damson "mush" is delicious! We put it on ice cream. Also found it freezes well. Yum!
