Just yummed our pancakes for lunch.

Why does the first one cooked never work properly? After that everyone is perfect.

My pioneering ancestors in NZ talked about damper in their diaries. I had to Google it!
Wild pork and damper seemed to be their diet in the Bush.

Callistemon21 when my Mum was a Guide captain she used to form the damper dough into a long sausage shape and wrap it round a green stick, then cook it over the fire.

It sounds like damper, but that is formed into a loaf and baked in the ashes of a fire.

You can make peasant pancakes when the fridge is empty. Plain flour beaten up with water and fried. Vegan and filling.

It must have been the first one. If I were her, I would have insisted on making a second one, and ensured that was the one they filmed. No wonder it didn’t toss, it was stuck to the pan!

My pancakes have always been hit and miss and yes, the first one’s always been a mess. So I decided to follow a recipe properly this year instead of just sloshing the ingredients in. I turned to the sainted Delia, weighed everything carefully, added melted butter before cooking, and they were the best I’ve ever produced, including the first one, which was perfect. Just as well as I had 24 to make for 6 of us (actually I miscounted and DH and I were forced to take one for the team and eat 5 each blush).

The only thing Delia did that I didn’t was to cook her pancakes in butter, not oil. I doubt she’d be doing that now, considering the price of butter. smile

I actually remembered it this year although forgot to buy a lemon so had blackcurrant jam instead which was quite yummy. The first one was a complete mess, as usual.

Always think of this on Shrove Tuesday, bit sexist nowadays, poor Mum was expected to do it all back then!

Instead of 8 nicely shaped little round Scotch pancakes 🥞 I have 7 misshapen triangles of varying sizes 😁

I am not vegan but my rellies are so how do you replace egg?
I thought the main reason for making them was to use up excess eggs and milk before Lent.

Made gluten free pancakes with oat flour. OK but not the greatest. Mr A thought we should try a different recipe next year. I think we should be trying out different recipes all this year so we will know our favourite recipe for next year 😉

Very true Galaxy.
I don`t like them,but i used to spend a good hour in the kitchen cooking them foe my boys and the then husband It was a competition as to who could eat the most,great fun.

Pancakes for lunch. I like golden syrup and to squeeze an orange quarter on mine. Then I eat the orange so nothing is wasted.

Was going to make the batter first thing, but used the last egg yesterday. So had to wait until we had been shopping.
The batter is now standing, waiting for the lemon and golden syrup( me), sugar and lemon for DH.
Mind you, I had to search the fridge for the lemons that I knew were in there somewhere
