My pancakes have always been hit and miss and yes, the first one’s always been a mess. So I decided to follow a recipe properly this year instead of just sloshing the ingredients in. I turned to the sainted Delia, weighed everything carefully, added melted butter before cooking, and they were the best I’ve ever produced, including the first one, which was perfect. Just as well as I had 24 to make for 6 of us (actually I miscounted and DH and I were forced to take one for the team and eat 5 each
).
The only thing Delia did that I didn’t was to cook her pancakes in butter, not oil. I doubt she’d be doing that now, considering the price of butter.
