What's your favourite hot weather lunch?

I have just had a cheese omelette and salad. I make a large one and have half of it cold tomorrow. With salad. And maybe potato salad. Light and tasty.

By the evening I don't really fancy anything much. Maybe a sandwich or a fruit salad and yoghourt.

Don’t eat lunch especially when it’s hot don’t seem to have an appetite maybe because I’m drinking more water. However if I was on the beach in Nerja which I’m going to in September it would be a Pina colada.

It doesn't matter as long as there is a lot of it, and just as much for dinner.

Hot weather makes me absolutely starving ,as it gives me so much energy that I get three times a much done as in colder weather.

My lunch today centred rather around a large scoop of Mackies vanilla ice cream, a large scoop of Waitrose choc chip with a spoon of black cherry preserve on the top. Not very nourishing but hey it was nice.

I had forgotten crab. DH and I had a round of the very best crab sandwiches in the world at a seafront cafe in Budleigh Salterton about 15 years ago. Just the mention of Budleigh Salterton brings back the memory. Never bettered.
We have been disappointed in the dressed crabs we have bought in recent years. But crab sandwiches were always a favourite. And potted shrimps. And Shippams crab paste and cucumber sandwiches for teatime! Havent had those for 40 years. Must look in Waitrose tomorrow. Does Shippams still exist even.

I've been buying "crustless" quiche lorraine from M&S (not really crustless as they have a base) and eating a slice with some coleslaw and a tomato.

Coronation chicken. I made that for lunch just now followed by cantaloupe melon with creme fraiche. All very refreshing.

Probably half a pack of halloumi, sliced and fried in just a film of oil, a good chunk of white cabbage, a cut up apple, and any other salad-y bits I happen to have.
It’s a regular lunch for me at any time of the year.

Spring vegetable soup with black pepper, a few extra peas & some lovely tofu. Not forgetting a lovely chunk of bread. Light & refreshing.🙂

Thank you for your replies. Lots of good ideas. Salmon in various forms comes up tops and feta is popular.
Although today turned out not quite as hot as forecast as the cloud most of the day screened the fierce sun, I only fancy greek yoghourt and strawberries tonight and then a cool bath.

One of my favourite hot weather meals is salmon marinated in yogurt, garlic, sun dried tomato past and lemon - baked. Served with cucumber salsa. So chopped cucumber, tomato, onion, chilly, lime salt and pepper and tsp sugar if the tomatoes need it.

One of my favourite meals ever was coming across fishermen in France barbecuing fish on the beach served with crusty bread and salads with glass of red wine. I chose sardines. It was food made in heaven.

I do like barbecuing in hot weather. It is such an easy tasty meal.

I don't choose food according to the weather. My late mother used to complain it was too hot to eat. I really don't get it, I'm just as hungry whatever the temperature and as happy to eat hot food any time.

Yes, I agree. We had spaghetti bolonaise for lunch, but will have a salad for supper.

Had mackerel with a couscous salad - plain couscous cooked and cooled- with chopped: tomatoes, cucumber, pickled beetroot, pickled cucumber, capers, spring onions and lots of lemon juice added. Didn't have any mint otherwise I would've chucked that in as well

Followed by a strawberry Mivvi ice lolly (now made by Del Monte)

Managed to eat outside just before it started to rain.

They all sound too much for me. My ideal would be about a.half a cup of gazpacho and, if someone is eating with me I might cut a slice of baguette or ciabatta to keep up appearances.

Salad nicoise with or without the tuna.
I'm making a version today without tuna, to have with pulled pork. I'm attempting my first smoked pork shoulder, wish me luck.

That does sound nice. I love asparagus, but rarely get to eat it because my OH can't stand it and it always seems a bit of a waste to buy it just for myself.

I’ve just been sent a recipe for coleslaw ice lollies. I think I’ll pass on that.
