It’s been a while so I will start us off…….whats for supper and why?

A substantial minestrone, with pasta (obviously), a tin of butter beans and sundry veg, and garlic bread out of the freezer.

Salmon, rice, spinach, green salad, fruit.

Crispy tofu cauliflower curry for vegans who won't want fish. When our daughters and their families are round I typically prepare 2 mains.

Tonight, fresh salmon, baked in the air fryer. Parmentier potatoes with carrot and onion. Sweetcorn and spinach. Fresh fruit.

Yellow lentil dal, with spinach and cauliflower. And, since I remembered to get some, naan bread.

We don't eat feta, added 50g quinoa.

I also made brown vinegar dressing (IOW dressing choices).

I had never heard of farro before.
In the pic it looks like pearl barley, which I use quite a lot in winter.

Tonight, it was chicken and pasta in a tomato and chilli sauce with a fresh pear and small Twix for afters.

Celery cashew stir fry, rice, bread, green salad, fruit.

Chicken thigh tray bake with red onions, garlic cloves, peppers, baby tomatoes and potatoes.

Spicy carrot and lentil soup with crusty bread followed by banana custard

I had made rather too much mashed potato even for the monster shepherds pie I took to DD’s yesterday, so I bought some lovely fresh spring greens specially and we’ve had bacon, eggs, and a lot of bubble and squeak. 😋

I forgot - and capers.

Linguine with a sauce made with lemon juice and zest, cream cheese, pasta water, chilli salmon flakes on top and possibly pine nuts (if I have any left) and parsley.

Oven fish and chips, pollock tonight, with mushy peas.

I cook the lentils, not tinned. No chorizo for us.

As predicted yesterday
Cold gammon, fried potatoes and pickle-y stuff.

I have some smoked haddock to use up. This evening I might make kedgeree or just a simple poached fish with spinach and a poached egg. We shall see.

Just had some buttered toast and a mug of tea. We got in late from visiting relatives and I was a bit peckish but didn't want a big meal before going to bed.

Pizza. 🍕

Swedish meat balls tonight and spaghetti. I cooked the spaghetti yesterday and then froze it. Supposed to alter the carbs, I believe. Better for you if you are diabetic.

Gammon (currently simmering in coke), buttered Jersey Royals and a salad of some sort. And more or less the same tomorrow.

Some bbq belly pork slices and some ready chips from Waitrose. It's been a tiring day. We devoted a Turkish takeaway but that would have involved a walk up the road - and a step too far.

A stir fry, with some bits of leftover chicken from the freezer, lots of assorted veg and egg noodles. A packet sauce, with ginger and red chilli pastes, plus lemon juice, added.

Vietnamese sea bass this evening. Just sea bass cooked with shiitake and oyster mushrooms. With a sprinkling of herbs, fishsauce and dark soy. We will probably have broccoli with it. Another low carb dinner.
