It’s been a while so I will start us off…….whats for supper and why?

This evening it’s chicken risotto as I needed to use up some leeks and yesterday’s roast chicken.

It’s happily cooking in the Thermomix whilst I waste time on SM!

Risotto is my go to comfort food, I just love it and I always have ingredients to cobble one together.

Mushroom omelette and a pot of Greek yoghurt. I think I’m losing weight. Good bc I fit into a sundress I bought in Florida when I was 48 (I’m 71 now) and that a was a pleasant surprise as I’ve been sorting clothes this morning.

I’ve not bought any ‘goodies’ at the supermarket this week. No biscuits, crisps, chocolate etc so no snacking possible. Just 3 meals a day and as the nurse running the pre diabetes course told us if you don’t buy it in you can’t be tempted. 😁

Yesterday was barbecued chicken crispy roast potatoes and summery veg.

Today was sweet and sour pork with jasmine rice - CB. An easy day after doing a load of gardening.

I made a big batch of potato salad this morning so we’ll be having that with some breaded fish fillets (20 mins in the oven) and salad.

Salmon with lemon juice baked in a foil parcel. Sweetheart cabbage, lightly cooked in tiny amount of water, mustard and knob of butter. Wholegrain rice. Lemon yoghurt.

We are in an hotel. Last evening it was sea bass with a lovely parsley sauce, broccoli, French beans,mangtout and baby potatoes. Followed by chocolate, coconut and lime cake with chantilly cream.
Full Welsh breakfast this morning, but no idea what I shall choose for supper😀🤔

Yesterday was - boiled egg, Jacket potato and baked beans, vegetarian egg fried rice.

Today - porridge with flax and chai, zuzzed with tinned fruit in juice, Salad With egg, bacon and croutons, Greek fish roast.

Dh is away tonight, so since I’ve done a lot of jobs today I absolutely couldn’t be bothered to cook for myself. I’ve had one of our emergency Fray Bentos pies (chicken) with a lot of sweetheart cabbage that needed using up.

Asparagus and broccoli with a vinaigrette sauce.

One of our favourites tonight. Asian parcels. Sugar snap peas, broccoli spears and peppers with a piece of salmon on top. Sauce made from ginger and dark soy poured over. All encased in a grease proof paper parcel. Usually eat with wholemeal rice.

A substantial veg/chicken soup, with some of the last bits of the chicken plus the stock, and parsley dumplings (veg suet) - simmering away for another 10 minutes.
