This evening it’s chicken risotto as I needed to use up some leeks and yesterday’s roast chicken.

It’s happily cooking in the Thermomix whilst I waste time on SM!

Risotto is my go to comfort food, I just love it and I always have ingredients to cobble one together.

Chicken and salad wrap - using last of chicken
Liver, bacon, Jersey royal, broccoli and peas.

Today we are having a full English for brunch- with fried bread - it is a Bank Holiday after all.

Nigel Slater's braised sausages and mashed potatoes probably with minted peas this evening. Not at all fancy but all quite easy.

sp toutes not routes!

Wyllow3 Mon 04-May-26 08:04:53

Me too. Plus a lot of raw chopped salad and raw vegetables which I do like (green peppers, mange routes, I adore raw carrots so I buy posh ones) and gives me the 5 a day easily.

I sometimes stir fry the chopped up stuff

Baby potatoes do well in the microwave, as do the quantities of fish I love too, poached effect with butter.

What fancy meals some of you cook!
I used to cook for a large family and there was not one meal which everybody liked, so umpteen variations needed. Now I’m on my own I aim for something vaguely nutritious and quick, with heavy use of the microwave.

We had fiery prawns with spinach and wholemeal pasta. Why… ? we are eating as healthily as possible. It took about 30 minutes to cook and wad superb.

kitty that sounds delicious!

I ought to say why I suppose - but it is what I plan and shop for that’s the main reason. But I will deviate if something needs using up. Like tomorrow will probably be chicken salad - to use up some roasted chicken. I’ll freeze the rest.

Bakes potato - the insides scooped out and mixed with cooked bacon and onion, grated cheese, butter and cream. All put back in the skins, topped with more grated cheese and baked a little more. DH is away so I am indulging myself.

Pancit, fruit, bread.

Witzend Sat 02-May-26 12:16:23

Homemade burgers, with whatever veg I’ve got, because the minced beef needs to be used.

Whitewavemark2 Sat 02-May-26 07:56:20

Today

Boiled egg

Pitta bread filled with small chunks cheddar, apple and salad.
Pear

Chilli con Carne - Greek yogurt, honey and summer berries.

Two grandchildren here, we all had pasta, gluten free for GD, tomato and garlic sauce with Toulouse sausages and mushrooms. Then they had ice cream afterwards. I had a couple of glasses of Viognier after dinner sitting in the garden enjoying the evening sun.

Caleo Fri 01-May-26 20:36:29

Cauliflower -cheese fry with ketchup. Drink of water with luxury elderflower cordial .

Norah Fri 01-May-26 20:30:00

Two of our families came round, with salmon.

We cooked rice noodles, veg, soy, ginger - salmon on top.

I had a different menu for us.

Delicious.

DH brought home our first Jersey Royal potatoes today. I shall cook them to have with cold chicken and salad tonight. I live in hope but know they won't taste as good as they always used to. From what I read that's largely down to not using seaweed as fertilizer and that so many are grown by large corporations not the small farmer of yesteryear.
The best I've ever tasted were years ago on holiday in Jersey when they would have been harvested that day or the day before. That and the local tomatoes were food of the gods grin

kittylester Fri 01-May-26 15:42:39

Chicken tray bake. Easy to prep and little clearing up.

JamesandJon33 Fri 01-May-26 13:44:14

Lunch was mortadella and cucumber sandwich with a handful of vegetable crisps. Plus a bowl of blackberries and sreawberries with coconut yoghurt, and a very dilute glass of elderflower cordial. Dinner tonight is a cottage pie, I made, eventually, this morning. It has a potato and celeriac topping and I think we will also have broad beans.

Jaxjacky Fri 01-May-26 13:00:07

Just eaten brunch, wheat biscuits, prunes, blueberries and half a banana.
Dinner was cottage pie with some lentils added in, sadly mince is still in the freezer, so cheese/onion quiche, new potatoes with carrots and peas.
