It’s been a while so I will start us off…….whats for supper and why?

This evening it’s chicken risotto as I needed to use up some leeks and yesterday’s roast chicken.

It’s happily cooking in the Thermomix whilst I waste time on SM!

Risotto is my go to comfort food, I just love it and I always have ingredients to cobble one together.

We don't eat feta, we add cut strawberries, serve on rocket.

Salmon (for those who eat fish), quinoa with veg, bread.

We always go out on a Friday evening (if we stay in then it’s a takeaway) tonight we are going to one of the local Indian restaurants.

It has become our favourite, it is owned by a very nice man from Pakistan the chef is also from there. You can taste the difference from the other Indian restaurants which are predominantly Bengali.

The steak we didn’t have last night, this means having wine on a school night because I cannot enjoy steak without a glass of red 🍷🍷🍷

Saturday evening I had cold chicken breast with a mixed salad and a homemade potato salad.
The potatoes were from Shrewsbury market. Cheshire new potatoes. They were absolutely delicious. The best potatoes I have tasted in many years.

We had a lunchtime BBQ then my husband took son and DIL to the airport to fly home.

He’s home now and asking what’s for supper……..oh the disappointment when I told him it was omelette.

I too had curry this evening - a leftover portion of a vegetable curry I had cooked for DD, and then frozen. Microwave rice, naan bread and a mango chutney that is so delicious I could - and frequently do - eat it straight out of the jar with a spoon!! I love lime pickle but it doesn’t love me!

A vaguely chicken curry - onions, some leftover bits of roast chicken from the freezer, a little leftover proper tomato sauce from yesterday’s pasta, a small potato and a parsnip chopped up, a chicken stock cube, the last of a cauliflower (still good), possibly a small apple, chopped, curry powder, obv. - and probably a dollop of mango chutney.

I love this thread - so much variety.

We are having cold everything - bought in M&S yesterday. Sadly, there was a huge fire in the shopping centre yesterday and it is closed - hopefully not for ever.

Lamb moussaka with Greek salad (black + green olives , lemon juice, virgin olive oil and and feta cheese).
A lovely meal on a hot day and reminiscent of many holidays in Greece.

Something Korean for which DD2 sent the recipe. It was delicious even though the red pepper it asked for wasn't in the fridge. It used sticky rice and was topped with a fried egg.

Homemade pizzas as I thought I’d give the dough a bash and they turned out lovely.

Toppings was
Mozzarella
Red Leicester
Onion
Chorizo
Mushrooms

I make my own bread and focaccia’s so thought why not with pizzas.

I’ve found some lovely no knead recipes as I’ve arthritis in both hands. Win win

I made a delicious Pasta a la Norma tonight, a favourite. So easy if you cook the aubergine in the air fryer.

A (cheeky) small Waitrose Bramley Apple Tart and a cup of tea. 😋

Salmon fillets & a veggie stir-fry here tonight. Easy to cook around getting all the laundry sorted (got back from holiday yesterday evening).

I made myself a mushroom omelette with a mixed, dressed salad and Gigli pasta. It was delicious.
A meringue shell, crème fraiche and strawberries to follow.

Tonight I had an omelette, a slice of left over smoked salmon and 2 fried tomatoes. Then 2 very juicy nectarines.
