Tagines

My daughter has just bought me a tagine and I haven't got a clue how to use it. The only instructions with it are a recipe for a lamb tagine but it says it is made in a casserole dish. The back of the box also says it can be used on the hob or oven but in the warnings it says do not use on the hob. Can anyone help please

Mine had some rather basic recipes, but I bought a book with more in it. Our favourite is Moroccan Meatballs with tomato sauce. I shall find the recipe and upload it to the recipe section for you.

I shall try to upload my family's lamb tagine recipe for you. I do a veggie version that uses squash or sweet potato instead of meat.
The point about a tagine is very gentle cooking, and I have seen the pot used on a French hob with an asbestos mat to keep the heat evenly distributed. I have adapted mine for the slow cooker.

nanimoo once you have mastered it you will find that the dishe's you cook in it to be so tendar and flavoursome,but as jackyann said it is a very gentle way of cooking,originated from the Nomad's burying the food in sand and earth with hot coal's and leaving for hour's.

I have used a tagine for a couple of years now and it does makes lovely "casseroles" - the advantage over an oven cooked casserole is that it stays much more moist with no burnt on edges. You do need to use a "heat diffuser" to use it directly on the hob top. Mine came from Lakeland (the tagine AND the diffuser) and they also stock recipe books for tagine recipes.

Traditionally tagines were Moroccan with all of their spices but you can use any of the usual casserole recipes.
Ariadne - I think you mean couscous, Really useful stuff as it is ready in just a few minutes but does need some extra flavouring added to make it a bit more interesting

Brand new tagine used this evening - by my husband. Delicious, delicate and tender lamb tagine. When I asked about the recipe he said he had down-loaded several from the internet and then just done his best with the ingredients he had........ mmmmm..... more please smile
The tagine is a Le Creuset and was used on a Neff Induction Hob - no problem...

Thank you everyone for your help. Made a vegetarian one today for tea, hope it turns out ok.
