Scum on jam

Apparently I can use my breadmaker to make jam but have never tried.

Have you tried a Jam maker?- Tefal do one- I have made my own preserves for ever but this just makes it so quick & easy. Best pressie Hubbie ever bought me!

Used to be children's perks in the days when Mum made jam, along with the bit in the saucer when she tested the "set".

I'm always fascinated by how a knob of butter added at the end disperses most of the scum. How does that work?

If you don't skim the scum off, Oxon it will spoil the appearance of your jam when you pour it into a jar as bits of it will float about and make the jam look cloudy.

Every recipe for jam says skim the scum off - why?

(I just bought bread and had to evict some frozen raspberries from the freezer to get the bread in, so will have to make jam!)
