I don't freeze strawberries whole. I purée them first and then freeze the purée in small containers. It makes lovely fruit yoghurt for my breakfast or can be used with ice cream.

Does that one have Certo in it? Mine does. It still comes out runny though, (once you defrost it, that is)

Used to have a recipe for freezer strawberry jam. You add far less sugar than usual and keep it frozen in small quantities until you need to use it. Absolutely delicious!

I use the tray method too, same for raspberries. If you defrost overnight/slowly in the fridge, they hold their shape much better.

It's a myth that you can't freeze strawberries .Spread out on a tray and freeze.OK they collapse when defrosted but can still be used for coulis,jam, etc or for last minute decoration of e.g trifle.
Can't have too many strawberries.

We should arrange a north/south swap. My strawberries are not ripe yet, here in the cold north, but they will ripen when your glut is over. Shame we cannot just PM them!

Oh that is no problem I will wizz down to Morrissons on my way out and park the broomstick on the slipway down to the River then I can get an easy getaway its all downhill so a swift takeoff can be assured.(landing safely though is another matter altogether)hmm

Strawberry liqueur is less faffy to make than the wine and it's ready to drink much sooner. Tell OH it's cough medicine.

Hmm hmm thanks Notsogrand, but it looks a bit fiddly and since OH would rather be fried in oil than drink strawberry wine, I think I'll give that one a miss.

I have made ice-cream, water-ice, 10lbs of jam, frozen puree and jellies with pink champagne. What next? I was wondering about making little bottles of coulis for presents - has anyone tried? My strawberries are the French Gariguette variety.
