I am thinking of buying a slow cooker. Has anyone got one and if so do you use it?

We have a local butcher also grannyk and he has the seal of approval above his door from her maj....and he supplies shins of beef

I use my slow cooker quite a bit but never for rice pudding. For me, that HAS to be cooked in the oven so that you get the lovely skin on it - that, and the scrapings from round the edge, are the best bits

yogagran - you get that in the slow cooker as well! Absolutely delicious! I got the recipe in the leaflet that came with my newest one (I've had 3 over the years). smile

marelli, could you outline the rice pudding recipe please? I haven't eaten it for many years, since microwaves were a new thing and mine came with built in grill, which made a lovely skin on top. I am drooling at the thought!

Marelli Sun 09-Sept-12 16:27:04

Here you are, shysal! Mine is a 4.5 litre cooker, but the recipe gives you the ingredients for the 2.5 litre as well.

2.5 litre 4.5 litre

25g butter 40g butter
100g pudding rice 150g pudding rice
100g sugar 150g sugar
1 litre milk 1.5 litres milk
Pinch nutmeg Pinch nutmeg

Method

Butter the inside of the ceramic pot. Add all ingredients and stir. Place the ceramic pot on the slow cooker base and cover with the lid. Cook for approximately 3-4 hours. (Medium setting).

It's lovely! smile

What if you've only got high or low settings? confused

Can someone please tell me whether it is necessary to brown everything before it goes in? Thank you flowers

Marelli Sun 09-Sept-12 17:13:57

I think I'd put rice pud on low and let it cook for a bit longer, Anagram - say another hour or so. You can always have a look at it when it's nearing the end of the cooking time, to see how it's doing.
kitty, I usually toss meat/poultry about in a pan just to seal it before putting it into the slow cooker. This can be done while the cooker's warming up a bit in readiness.

Thanks Marelli. On a 'fasting day' of my alternate - day diet today, but might try it tomorrow.

Anagram Sun 09-Sept-12 17:17:04

I'll try that, Marelli, thanks. I suppose you can't go far wrong with rice pud...(she said, hopefully!).

Marelli Sun 09-Sept-12 17:17:44

I might do, too! smile

Marelli Wed 12-Sept-12 12:08:20

Ooh - I never thought of that, Nellie! I'll get some oxtail soup next time I'm at the shops. I'll have to go and write it on my list now, or I'll forget! grin

Grannyknot Wed 12-Sept-12 12:28:55

littlen yummy, am also fantasising about that now. As kids we would beg my gran for the marrow from the beef shin to have on toast. I'm delighted to have that rice pudding recipe, DH is gonna love me for it. smile

I have put a rice pudding in the slow oven for later on. It will have a dark brwn crisp skin on it, which everyone will be fighting over. Delicious.

soop Wed 12-Sept-12 13:06:14

Cazcandoit When I went to school, I always asked the dinner lady for the milk pudding skin. My mouth is watering at the memory. Do you add sultanas?

Whoops, sorry still learning how to post. No, I don't use sultanas, just pudding rice milk nutmeg sugar and a few tiny pieces of butter that I stir in when it's hot, then I leave it to bake slowly.

....mmmmmm! [greedy emoticon]!

shysal Wed 12-Sept-12 16:32:41

Just sampled today's first attempt at rice pudding in the slow cooker using the above recipe.
It was made with skimmed milk but is very rich. I think I would cut down on the butter next time and substitute sweetener for some of tne sugar. I made the smaller quantity and worked out the calories for the whole at 1055!!! When cooled I shall freeze small portions to stop me eating it all now.
On the subject of oxtail soup, I used to use it as an easy cook-in sauce for meatballs. My children loved it.

soop Wed 12-Sept-12 17:16:40

May I have a wee taster with my runcible spoon?

shysal Wed 12-Sept-12 18:15:12

I am disgusted with myself! I have eaten about half of the rice pudding including all of the skin! Can't have anything else to eat today (went out to lunch too!)

soop Wed 12-Sept-12 18:21:03

shysal You should be ashamed of yourself. I would never succomb to such temptation. wink grin

Marelli Wed 12-Sept-12 19:54:07

Oh shysal - that's wonderful! Your very sensible posting at half-four.....then the next one an hour and three-quarters later......a woman after my own heart! grin

annsixty Wed 12-Sept-12 20:06:13

I'm sure it's an oversight but no-one has mentioned gammon in a slow cooker- superb!!
