Misplaced recipe now found just in time!
On the 9th day of stirring and adding to the sourdough mix, devide into 4 equal parts. One is to bake and the other 3 to give away with instructions or keep 1 to carry on.
On the 10th day, stir mixture well, then add:
1 cup caster sugar (225g/18oz)
2 eggs
2 cups plain flour (225g/18oz)
pinch of salt
2 heaped tsps ground cinnamon
2 heaped tsps baking powder,
cooking oil (olive/sunflower/rapeseed) (175 ml/6 fl.oz)
2 cooking apples - peeled, cored and cut into chunks
half cup walnuts/almonds (75g/2.5oz)
1 cup raisins/sultanas (150g/5oz)
2 tsps vanilla essence
Other options include pineapple, cherries, chocolate or coconut. Basically whatever you like in a cake!
Mix together and put into a large greased baking tin. Sprinkle with quarter cup brown/demerera sugar and pour over quarter cup of melted butter.
Bake for 45 minutes at gas mark 3/4 (70-180 degs C). It may be done after 35 mins or may take a little longer depending on oven!
It can be frozen or reheated as a pud. Enjoy!
