Any vegetarians out there?

I have a friend coming to stay overnight with me next week who is vegetarian. I know her favourite is three bean stew/casserole and would like to make it for her but don't have the recipe. If I ask her for the recipe she will just say she will make it and bring it with her and as she is doing me a favour anyway I would like to surprise her with her favourite meal. Does anyone have a fairly simple recipe (I'm not a great cook!).

This last one is very easy. I make it as enough for 2 and I just cut about 125g of feta into chunks and serve it on top of the pasta. It is so easy and one of our all time favourites.
It's really "more or less" of any of the components. This week I chucked in some left over mushrooms and brocolli just to finish them up. What you put in is up to you
