Angel cake

Don't do angel cake but a family favourite yummy cake -All Bran cake-
has No Eggs and No Fat.
Incredibly easy to make .I usually make double quantity as it keeps well in freezer.

4 oz All Bran )
5 oz Sugar )Mix and allow to soak for 1 hour
10 oz mixed dried fruit )
Half pint milk )

Add 4 oz SR flour Mix well.Bake in lined loaf tin for 1 hour at 175 C. Gas mark 3

I've made Delia's all in one sponge using Two Chicks egg whites in place of the eggs quoted. The measurements are on the side of the Two Chicks carton. I've also made it using GF flour and it is definitely passable. Or absent's Italian Almond and Orange cake is fabulous and only uses egg whites but is quite large. It keeps fairly well though.

Cant see why not.

Really wanted round but suppose that would work in a round tin. What do you think?
