rice flour

I use rice flour as I am gluten free -add xanthan gum and it will work like ordinary flour

The recipe says loaf sugar, elegran. It's in a book that was published in 1900. Recipes collected by the cook at a Scottish manse. A large Scottish manse, I should think. You should see the xmas pudding recipe – makes at least half a dozen.

Rice cake recipe:
8oz rice flour
8oz sugar
6 eggs

Beat the egg sand sugar together till you can write a w in the mixture (as for Swiss Roll), then fold in the flour.

You can season with almond essence if you like, or orange-flower water but I don't bother with that.

If you baked that in a large flat pan you could make a massive Swiss Roll wink


Or you can substitute rice flour for some of the wheat flour in most cake recipes, just to use it up.

I make macaroons sometimes with left-over egg whites - they have rice flour in them.

If you Google "recipes using rice flour" you should get some ideas.

You use it in shortbread. Only an ounce to 5 ounces of plain flour though.

But you could make a lot.

well i dont know,my daughter has bought me a bag of rice flour! what do i do with it, she gave it to me to cook with,cook what i ask, i havent got a clue has anyone got any ideas not one of my baking recipes,shortbread,cakes ect mentions it ground rice yes but not rice flour,she bought it by mistake and left it to late to exchange can anyone help i dont want to waste it
