J08 I also love jam lids popping shut. One day I was sitting at the table where a trayfull of jars started one after the other, very satisfying.

GrandmaH Chutney should be stored in a cool, dark place so if your larder warmed up this year with the hot summer, that might well be the reason why the chutney has shrunk. It is hard to understand why anyone would design a house in the UK with a larder on a south-facing wall. Must have been a man. grin

Do you put it in the jars when piping hot and put the lids on straight away so that the pop-y bit on the lid pops inwards? And fill the jars to the brim so no air space? Love the sound of the lids popping as it cools.

Sorry can't help except to say maybe the lid isn't on tightly enough and evaporation is occurring. Yesterday I made this year's batch of green tomato chutney and have put it away (for three/four months). I've never kept a chutney for two years, but hopefully the open jar should now last just long enough for the new stuff to mature.

Just making Green Tomato Chutney. I went to make some room in the larder & noticed that some from last year- which should now be at their best- have shrunk right down & are very solid.
Does anyone know why this should happen?I use the same old recipe every year & usually leave it one or 2 years before eating. Some of the Old Doverhouse chutney has shrunk too. As larder is on an outside south facing wall I did wonder if this hotter than usual (HOORAY) summer.
I've never worried about storing it in a cool place before but this is the only thing I can think of.
Any ideas?
