Ideas for salads and low GI foods

I like quinoa, too. It's easy to cook, as are buckwheat and buckwheat noodles for salads.
I like them mixed with lentils or chickpeas for added protein.

sounds good Mamie, have often looked at preserved lemons and wondered what I could do with them. I like quinoa with chopped spring onions, chopped tomatoes and cucumber.

mmmm, they sound scrum. Will have to check out pearled spelt - don't know what it is!

I will start with two current favourites; quinoa salad with pistachios, courgettes and preserved lemons and pearled spelt with mint, feta and avocado.
