Christmas Cake

It's that time of year again- I'm thinking of making cakes in the next couple of weeks so will be shopping for ingredients soon. I usually use Delia's recipe but now find it rather heavy on the currants. Does anyone have a favourite recipe to share please - not of course your family secret?

Didn't make one this year but bought gluten free fruit cake slices which GD and I iced and put little decorations on. They looked really good and GD (10) was very pleased with the result. We also made Rocky Road - real tooth rotting stuff - something which I no longer have to worry about tchsmile

A friend of my mother in law bakes our Christmas cake every year. I'll try to remember to take a photo - it has Pingu style penguins on it. Lovely.

Mine is marzipanned and in the dining room where there is a dehumidifier on, covered with greaseproof paper for a couple of days before I put on the (roll out) icing. Maybe we could have a'picture' thread for us to pinch ideas admire each others' cakes.

Do others leave their cake uncovered for a few days, to let the marzipan dry out? I know you are supposed to, but it seems a bit unhygienic!

I have now marzipaned my cake - shall ice it at the weekend I think if time or perhaps on Tuesday - grandchildren on Monday. I also have a gingerbread house to make - probably on Tuesday as well.

Just heard both daughters, sil and grandchildren coming over for Christmas- so will be making our eggless Christmas cake next week (as GS is very allergic to eggs and some nuts).

So sorry aout your wrist baubles and hope it is not the one you use most. I broke mine in the summer and it was just a b*** nuisance but has healed reasonably well. Look after yourself.

baubles oh no I'm sorry - I hope you will be able to manage whilst in plaster. Are there any little elves that could help aka Grandchildren? Where do you live - I could make one for you?
My first one (this year) juts came out of the oven and I am so glad I took the bother to double line the tine and wrap the brown paper round the outside - its a lovely warm brown colour and I can see cherries, nuts and fruit on the top. Smell delicious too. Perhaps do another one on Sunday.

I'm so glad I made a christmas cake on Monday, I'd planned on making another this weekend however I broke my wrist the other day so unless I find a willing assistant that won't be possible. Rats!!

Delia did a mincemeat one years ago that I made. I think it was called Last Minute Christmas Cake - I suppose because you didn't have to make it in advance to allow for the fruit to 'mature'. It worked well, but I found it a bit sweet, but I don't have a sweet tooth!

In the past I have made Christmas cakes from a Tamasin Day Lewis recipe which are very nice and moist, but can't find it on the internet. I think it was published in a magazine some years ago.

this recipe has a jar of mincemeat in the ingredients That's different. No nuts though. And you'd have to add some cherries!

The cake will be fine speckie but the icing will most likely be sticky.

Definitely 2014 Stansgran.

(They are probably photo-shopped!) Yours will taste better.

My two DS's love Christmas cake but their wives didnt want to make them and the DS's didn't dare for fear of initiating a stroppy sulk from aforementioned wives. So I always made three and gave them one each. Last year my one remaining DIL came over all earth mother for once and made a Christmas cake, so I put the one I'd made for them in my freezer. Do you think it will be alright for this year?
