PS I don't know which supermarket Ingot the grains from but they are a very useful addition to the 'larder' as vacuum packed with long sell by date.

I had a complaint that we always have boring salads! Yesterday I roasted and skinned some red peppers. I chopped them and added to a packet by Merchant Gourmet which contained cooked red rice , wheat berries and quinoa , with some chopped coriander and some balsamic glaze. Wanted spring onions but co op had sold out. it was delish.

We've had a couple of lovely salads for the last two days. Apart from the usual tomatoes, red pepper etc. we had loads of things from the Asda salad fridge (lazy but good). Some of the things were cous cous with roasted veg., garlic stuffed olives, mixed beans and a chilli loaf.

I do a rice salad with packet rice moistened with a dressing (usually balsamic) and then with chopped celery and spring onions, bit of grated carrot, sultanas and salted peanuts stirred in. Sometimes I add sweetcorn and thawed petit pois. I do add mayo to mine but I think it would be ok without.

Not really recipe but I like the flavoured vinegars - raspberry is nice. They are a bit expensive but you only need a dribble and it makes a green salad much tastier without being covered in mayo or oil. I also like grated carrot and celeriac but, being lazy, use the very old food processor to do the grating and hate washing it up so do that less than I ought. A squish of lemon or lime juice on celeriac stops it going brown. I am not a great fan of salad but I'm sure you will get lots of good ideas from others who are.

We had our first BBQ of the summer yesterday and although we are not big BBQ fans we do have a few. We do the usual stuff- DH does the BBQ (the only bit of cooking he does) and I do the salad which is pretty boring stuff. I'm looking for some inspiration for something different. My dilemma is that I really do not like mayonnaise at all or heavy oily dressing. I also do not like under any circumstance beetroot or avocado. Please can you share your salad recipes with me- I really need to liven up the Barbie!!smile
