We have a buffet meal coming up soon and I am wondering if it is safe to use a pack of smoked salmon and a whole side of salmon which have been in my deep freeze since Christmas. Both are sealed in plastic packs and my deep freeze is pretty new. What is your advice please ?

I would so long as they went in the freezer as soon as possible and weren't put in as an afterthought. I often have smoked salmon in my freezer for ages.

Salmon freezes really well so as long as your freezer is set to the correct temperature (-18) the salmon should be fine.

I agree with the above

I always have some smoked salmon in the freezer for emergencies (!) and it is fine for ages.

I keep smoked salmon in the freezer for emergencies but once made the mistake of defrosting it on the central heating boiler. In fact cooked smoked salmon is very nice.

Happy to report both the salmon and the smoked salmon were as good as new when I took them out of the deep freeze. They had been there since December but they did not smell at all fishy. My daughter says I make the best baked salmon ever so here is my recipe. I use it for a hot or a cold meal the topping is crispy for both.
I cut up dried apricots quite small and put them on the salmon ( they tend to burn so hide them ) . On top of that put a mixture of chopped nuts usually Brazils , breadcrumbs and chopped bacon. I leave a bit of fat on the bacon as it bastes the salmon . I press this down on the fish ad bake for an hour at 175 degrees .

That sounds delicious, eleanorre. Do you use both fresh salmon and smoked salmon in the recipe?

Smoking is an age old form of preserving food, smoked items do not need to be frozen just stored in a cool dark dry place. You do not put Kippers in the freezer, they last forever that is the whole idea.

It is just for salmon not smoked salmon .I also make parcels of smoked salmon filled with cream cheese which are popular and mix ribbons of smoked salmon with potato salad to make the salmon go further .

In the past I have found that smoked mackerel tends to go rancid if it's in the freezer too long and so does smoked bacon so I would check the smoked salmon before I used it.

Because of where I live I am fortunate to have access to fresh salmon and smoked salmon, there is a smoke house 2 mile down the road so we do very well in the fish department. I freeze whatever we cant eat straight away, which is quite a lot and have never had any problem with it when its defrosted

We tried your salmon with apricots recipe the other day, eleanorre. It went down very well! I didn't find that the apricots burned. I put a lid on the baking dish until the last few minutes, which possibly helped. We'll definitely have this again. Thanks for the idea.
