I made 2 mini mince rounds yesterday using fresh mince and defrosted short crust pastry - I baked both and ate one and now I am wondering if I can freeze the other one today or if I'll need to eat it tonight...?

Yes, because you have cooked the pastry since you thawed it.

Great, thanks - that means I can have cannelloni with the leftover mince for dinner.

Def. fine, a bit like freezing left over cooked turkey that was from a frozen bird, if that makes sense?

By cooking you change the molecular structure!

Yes, if you had assembled it but not cooked it, then no, can't freeze. But since you've cooked it, it should be fine.

Many thanks everyone - I have now blind baked the remains of the pastry so's I can do something with mini pastry shells now too. Perhaps I'll have savoury rice instead of the pasta so's I can freeze any leftovers from that tonight too! Next weeks meals well sorted thank you.
