Yes, we sometimes have a 'need' for malt bread smile

I bought some Wessex Mill malt flour and made malt bread in the breadmaker.
Not quite as 'squishy' as the ones you can buy, but very moreish.
I froze half of it as, unlike the bought ones, it was best eaten fresh.

The recipe above looks very easy - I might try it!

I recently found a thread on which a few GN's said they love Soreen Fruit Malt Loaf. Well, so do I, but a friend gave me a recipe, using Shreddies, that is good if you " need" it urgently and the shops are shut. Here goes:-
INGREDIENTS
Use a breakfast cup ( about 200ml / 7 fl oz) to measure
1cup malted breakfast cereal ( eg Shreddies)
1cup soft brown sugar
1cup mixed fruit
1cup warm milk
1cup self raising flour
METHOD
Put the first four ingredients into a bowl and stir, then leave to stand for an hour
Mix in the flour
Line a 2lb loaf tin, and pour in mixture
Bake in oven at Gas 4 ( (180C, 350F) for 1hour
Leave to cool before storing, or slicing and spread with butter

This is quite squidgy, and does not rise much in the tin, but is good to eat.
