Gluten free Christmas cake

Any good recipes. I will be buying the ingredients in the next couple of weeks.

would an ordinary recipe work , just change to gluten free flour ?

I don't know as only discovered I'm gluten intolerant this year. There is something about needing more liquid II think

There are quite a lot of recipes on the internet from well-known chefs.

I haven't made a gf version but will be doing so this year. Doves Farm make gf flour and I have found that their recipes work well with their flour, am I allowed to put on a link? They must have tested it even though it doesn't look as if it has extra liquid!

I am presuming it would work with brandy or rum instead of the sherry or fruit juice.

Have made gf Christmas and other fruit type cakes for a few years, thinking about it 8 or so. All have turned out well. Just pick a recipe you like the look of whitewave and all should be well. Find fruit cakes more reliable than sponge type cakes, took 3 attempts to get the top sponge layer of a wedding cake right, and still can't manage decent pastry hmm. Crumble is good though. I'm sure whichever recipe you choose it will work out well. smile

I made some gf scotch pancakes at the weekend and they were about the best gf thing so far.

Pastry - it needed a hacksaw to get through it. Even the birds turned up their beaks at it.
