When I shop for broccoli I try to find 'trees' with thinner trunks, in fact I've been known to snap of the stalk before bagging the rest. Earlier I weighed the stalks from todays meal and the three weighed 18 oz !!
Why can't they be removed before sale ?
To answer my own question because it would increase the price per lb but I don't want to pay for something that goes straight on the compost heap angry

Have always used broccoli stalks, mainly for soups, but good thinly sliced in a stir fry. Use mushroom stalks, sometimes use well washed potato and carrot peelings for soup. The green part of leeks has the most flavour (I think), suppose they are trimmed to make them tidier on the shelves.

Since I got a NutriBullet, the stalks go in there. I've always heard they're the healthiest bit smile.

I have a plastic container in freezer and cauliflower and broccoli stalks are chopped and added along with green leaves from leeks then added when I am making soup

I always use the stalks, thinly sliced and steamed, lovely, I try not to waste anything useful.

More stalk eaters in this house. I also quite like the stalk/ribs of cauliflower leaves. When I was small and went to the greengrocers, he used to sell mushroom stalks separately, cheaper than mushrooms, but every bit as tasty

I love broccoli, but didn't realise you can eat the stalks... Stumps, I call them, and deeply resent paying for them!

When I'm preparing broccoli I eat the raw stems, though the thickest ones are something of a challenge!

I'm another who thinks the stalks are the best bit! Lots of flavour, but I do peel the tougher outer skin with my potato peeler.

Well I've been educated by this thread smile I bin the stalks because that's what DM did.

DM used to persuade me to eat the stalks of cabbage and cauliflower by telling me that 'all the goodness and sunshine is in there' hmm

I do eat some of the stalk of broccoli but not the very thick large one. Although I like raw cabbage stalk.

Another stalk eater here,bugbear of mine is "trimmed leeks" the green bit is every bit as good as the white,why they cut it off is a mystery to me.

I am not a big fan of broccoli, but I think the thick stem, peeled and eaten raw, is the best bit. Considering it makes up so much of the weight you are paying for, it's a bit silly to bin it. If it weren't a super food, I probably wouldn't eat it at all. I never throw away mushroom stalks, either. My big vegetable bug bear is celery. Why can you rarely buy celery with a full head of leaves? They are full of flavour and brilliant for chopping into soups and stews. All you get are the stalks and a few leaves if you're lucky.

I peel the stalks and cut them into batons, and cook with the rest. They are the best bit!

If I'm making soup I add the chopped up fatter stalks to it. Quite happy to cook and eat the thinner ones though.

I've never tried the stalks, hmm I thought they would be stringy and chewy
