Galen it would be less of a problem if you followed the recipe, kept a portion and froze the remainder. You would appreciate it when you fancied something to eat eg next week and could not be bothered to cook. I rarely cook one portion for that reason.

Have a look at Yotam Ottolenghi's chicken recipes. He has several on a similar theme. They all sound yummy. I really fancy the one with prunes.

Try this one, Galen. It should be easy to adapt the portion size.

I might give this a go if I ever get my new (downsized) kitchen in running order. Still trying to find a home for boxes of equipment/books/ingredients.

Has anyone a good (ie simple) recipe for Palestinian chicken?
Preferably one that could be adapted to cook for one person! That's ME!
