Can't help , i can't imagine not eating meat! If you ever need a good beef recipe I'm your girl grin

I have a nut roast recipe in a mary berry book at home but i won't be home until tommorrow. I'll post it then. Looks quite good.

I have many many veg soup recipes but nothing in the roast line. If you want a selection of veg soup I will PM you any which are in my online cook book.

Thanks tricia, I use much less meat and veggie options are quite tasty. I would describe myself as demi veg as I still have fish and chicken but I may cut them out in the future.

Glad you found a recipe Ethel - I have had a good look in my Rose Elliot book on veg. cooking and there isn't one recipe for nut roast!
The nearest is pimento and chestnut casserole:
In a flameproof casserole sauté in veg oil 2 onions, chopped, head of celery, chopped, can of red peppers (or 2 fresh ones), 4 tomatoes.
Add 2 cans whole chestnuts, 2 tbsp flour and 1 pint red wine. S&P.
Bake at 350F, gas mark 4, for 45 minutes.
You can substitute mushrooms for the peppers.
I recommend this book "Not just a load of old lentils". It's quite old, but I bought it on Amazon recently for about £2 - I used to have a copy ages ago.
We're eating much less meat these days so I often make a veggie recipe.

Many thanks for the many replies to my request for a veggie nut roast. I haven't got time to read them all.

However I realise that many of you are so busy trying to stop drinking . that I was lucky to get even one answer.

I have found a suitable one in a book and will be making it soon, thanks again friends.

Having decided to revert to being a vegetarian (used to be many years ago), I would like a simple recipe for a nut roast that I can use every day not just for special occasions. I am not going vegan just veggie.
Anyone got an easy one please.
